At SAVVY, we’ve made a conscious effort to conserve energy and resources. Our state-of-the-art column still not only yields a better distillate, but it also uses only a fraction of the energy required by a traditional pot still. The column still that we use to produce SAVVY is 200% more energy efficient than a traditional pot still. In addition to saving huge amounts of energy, we recycle the water that we use during the distillation process.
In order for distillation to occur, it is necessary for water to circulate through the still. This water never comes into contact with any of the neutral spirit—it simply circulates through pipes inside the heat exchangers and condenser enabling the still to function properly. To distill 400 gallons of neutral spirit we use about 3000 gallons of water. Instead of using 3000 gallons each time that we distill, we recapture the water in order to reuse it. To do so we built a water reclamation system that includes (2) 3000-gallon tanks (Tank #1 & Tank #2) and a system of pumps, valves and copper pipes. Each time that we distill SAVVY, 3000 gallons of water pumps from a full Tank #1 through the still where it ends up in the empty Tank #2. The next time we distill, we simply reverse the flow and pump from the full Tank #2 through the still and then into the empty Tank #1. This allows us to use 3000 gallons of water indefinitely and waste nothing.
